Grilled Oysters with Flavoured Butter
Served 12 grilled oysters.
Ingredients
- 12 each Oysters
- as needed, flavoured butter (see recipes below)
Instructions
- Preheat grill to high heat.
- Rinse oysters under cold running water to remove any debris; allow to drain off.
- Shuck oysters and place onto a plate or baking sheet, keeping the oyster liquor in the shells. Discard top shells.
- Place a small spoonful of flavoured butter onto each oyster then place oysters onto the grill. Ensure oysters are flat so that the liquor and butter do not leak out during cooking.
- Cook for 3-4 minutes. As the oysters cook, they will begin to shrink, and the oyster liquor-butter mixture will simmer.
- Carefully remove oysters from grill and allow oysters to cool slightly before eating.
Lemon Leek Butter
Ingredients
- ½ cup Unsalted butter, softened
- 1 tbsp Leeks, finely chopped
- 1 tsp Lemon, zested
- Pepper, to taste
Instructions
- In a small bowl combine butter, leeks, lemon zest, and black pepper. Mix well to combine.
- Use butter mixture immediately or refrigerate until ready to use.
Notes
Chef’s tip: 1 tbsp of leeks can be substitute with ½ tbsp fresh chives or scallions if desired.
Orange Tarragon Butter
Ingredients
- ½ cup Unsalted butter, softened
- 1 tsp Orange, zested
- ½ tsp Fresh tarragon, finely chopped
- Pepper, to taste
Instructions
- In a small bowl combine butter, orange zest, tarragon, and black pepper. Mix well to combine.
- Use butter mixture immediately or refrigerate until ready to use.
