Steamed Mussels with Tarragon and Tomato

Serves 5-8.

Ingredients

  • 5 lbs Fresh mussels (well rinsed and drained)
  • 6 cloves Garlic, roughly chopped
  • 2 large Tomatoes, small diced
  • 1 cup Dry white wine
  • 2 tbsp Butter
  • 2 tbsp Whipping cream
  • 2 bunches Fresh tarragon

Instructions

  • In a large stock pot combine garlic, tomato, white wine, butter, cream & tarragon. Bring to a rolling boil on high heat on stovetop. Once at a boil add mussels and cover with a tight fitting lid. Keep heat on high and do not remove the lid until steam is observed (about 5-10 minutes). Check mussels and once the mussel meat has pulled away from the shell completely, they are ready to serve. Use a slotted spoon to remove mussels from the pot and a small ladle for the steaming liquid.
